Pok Pok Restaurants
Position: Chef de Cuisine
We are seeking a dedicated and driven restaurant professional to lead our newest project with Pok Pok Restaurants. Work closely with the Executive Chef to implement and manage a flexible concept built around the use of solid fuel and low-tech cooking in a sophisticated setting with a rotating menu, staff and visiting chefs.
You're a leader! Your ability to lead a small team and execute the Chef's and Operations team's directives will be key. You know the best way to make a difference is to get involved. Ideally you’re a student of the food of Thailand and Southeast Asia. You like to be on your feet and on the move. You think creatively and quickly, using your resources to solve problems as they arise.
You're a great communicator; you give and receive feedback graciously and always strive to do better. You're a service oriented person: This position requires interaction with the dining public as well as fellow Pok Pok Employees.
You’re a great listener; you enjoy getting to know diners, building relationships with the community, and representing the restaurant. You love staying in contact with local farmers and winemakers to stay on the forefront of the industry and build upon your foundation of knowledge.
You have the motivation and expertise to maintain both a kitchen and the service of an intimate and unique restaurant while remaining focused on your goal of 100% customer satisfaction. You positively influence a team, nurture their curiosity and build enthusiasm around quality work. Your standards are high, and you enjoy challenging your team to rise above what they thought was possible.
You'll achieve our mission by:
- Learning all recipes, techniques and procedures in Pok Pok repertoire and being prepared to step in when a need arises. Your curiosity for the food and food culture of Thailand and Southeast Asia will only increase.
- Meeting Pok Pok's exacting standards in regards to cleanliness and maintenance of all areas, equipment and facilities. You know what needs to be fixed before it's broken.
- Studying weekly financial analytics for areas of opportunity. Crafting employee schedules to meet labor targets. You may or may not be a wiz on the financials, but if you are ready to learn we will teach you.
- Maintaining clear and professional relationships with all Pok Pok's constituents: vendors, service providers, and other industry professionals and fostering an atmosphere of trust and responsiveness. Coming into something new, you understand the importance of a humble approach. Building these relationships will take time, effort, and patience.
- Honing and demonstrating strong analytical skills: setting priorities, proactively addressing problems, adapting. You remain focused and composed in the eye of the storm but know when to ask for help.
- Relentlessly upholding the quality of all food. Tasting everything always! You understand that above all else, the food has to be right! This is your mission every day.
